Believe it or not, but sushi is relatively new to the United States. According to Food and Wine, it first arrived here during World War II, but not many people could get their hands on it due to its cost. After the California roll was invented in the mid 1970s, the popularity of sushi skyrocketed; lowering costs and quintupling the amount of American sushi restaurants between 1988 and 1998.
